Brad Kilgore likes to build dishes that are consistent and have elements of architecture while being natural at the same time. His most well-revered dish is the Soft Egg at Alter with a Sea Scallop and Gruyere Espuma, Truffle Pearls, and Osetra Caviar.

Interview with Brad Kilgore, chef at Alter Restaurant Miami. Brad is a well-recognized Miami based chef originally from Kansas City with more than 10 years of experience working at fine dining restaurants, including Chicago’s L2O, Alinea and Boka. Brad Kilgore of Miami’s Alter is a 2016 F&W Best New Chef.
Brad Kilgore, why did you decide to become a chef? 
I may have found this answer later in my career but the act of serving someone your creation and being able to bring them joy is priceless. My whole family are artists, I cannot draw or paint so food became my medium.

How would you describe your style of cooking?
An accumulation of my travels combining techniques and flavors from all over the world to create dishes and experiences that are new and exciting to our guests.

What inspires you in the kitchen?
It can come from anywhere, I can see a sculpture or a natural environment and of course seasonality from the farms. I like to build dishes that are consistent and have elements of architecture while being natural at the same time.

Do you have a “signature dish” or favorite dish you enjoy cooking?
My most well-revered dish is the Soft Egg at Alter with a Sea Scallop and Gruyere Espuma, Truffle Pearls, and Osetra Caviar. This is best paired with our Brioche and Umami Butter.

Do you have a favorite ingredient?
I’m really enjoying the versatility of Fermented Chinese Black beans.

And what are your essential ingredients, the things you couldn’t live without?
I use various vinegars in my dishes.

Do you like to experiment or do you follow recipes?
I research techniques but never follow another chefs recipe.

What’s your impression of the Miami food scene?
Growing in the best direction, and proud to be a part of it
